Cook's Corner ~ Super Simple Cherry Tomato Pasta Sauce

Welcome to Cook’s Corner at California Gardens!

Super Simple Cherry Tomato Pasta Sauce

Cherry tomatoes rarely last long enough at my house to be cooked, but in the off chance that they do, this is one of my favorite recipes for them. The simplicity of it helps to preserve the fresh cherry tomato flavor.

1 pint cherry tomatoes

6 large garlic cloves, peeled and left whole

1/4 cup olive oil

salt and pepper, to taste

 

Preheat your oven to 350°F.

 

Combine the cherry tomatoes and garlic cloves in a 9"x9" baking dish.  Drizzle with olive oil and sprinkle with salt and pepper.

Bake for 40-45 minutes, until the cherry tomatoes have burst.

Serve immediately over pasta.

 

This sauce also reheats well if stored in the refrigerator for a few days.
