Cook's Corner ~ Beet Chips

Beet Slices

Welcome to Cook’s Corner at California Gardens!

Beet Chips

These baked vegetable chips are a great alternative to fried potato chips and the recipe can be easily adapted to other root vegetables such as potatoes, sweet potatoes, or parsnips.

2 medium beets, peeled and sliced thinly
4 to 6 tablespoons olive oil or other vegetable oil
sea salt or kosher salt

If you have one, use a mandoline to slice the beets to ensure that they are all the same thickness for even baking. Toss with olive oil until evenly coated.  Place beet slices in a single layer on a baking sheet and sprinkle generously with sea salt. 

Bake in a preheated 350F oven for 20 to 25 minutes or until crispy.  Let cool and serve with dip or hummus.  Store in an airtight container.
